Extra Virgin Olive Oil made from the superior category monovarietal variety of absolutely green organic manzanilla cacereña olives. (Early harvest). Unique for its organoleptic characteristics, this oil comes from completely green olives, a daring move that makes it an almost unique experience. Due to its limited production, it is one of the most exclusive EVOOs in Spain. It is a limited edition, with numbered units. It is protected in a very elegant metal canister and a sustainable noble wood cap.

On very specific days, at the beginning of the harvest season, during the month of October, it is made from green fruits to obtain its unique attributes. At least 20 kg of olives are needed to obtain 1 liter of product, as the olive is still in the green stage and its oil has not yet formed. So you can already imagine how exclusive this oil is.

Its aroma is exclusive, unique, different. Of great complexity and multiple sensations. It bursts forth with an intense green fruity aroma, of apple and leaf, with a clarity that recalls the freshness of summer fruits. There are also notes of banana, alloza, flowers, vanilla, pepper, and cinnamon. And in the background, the evocation of an oak forest, the atmosphere of its origin.

The mouth is pure and clean, sweet at first and immediately enveloping with its warm bitterness, its liveliness, its measured spiciness.
