Del Maguey San Luis del Rio Mezcal is an artisanal mezcal from Mexico known for its quality and distinctive flavor. Its production begins with the selection of Esapdin agaves grown in the mountains of San Luis del Rio, Oaxaca. The agaves, once mature, are harvested by hand and cooked in a traditional stone oven fueled with wood, giving the mezcal its characteristic smoky flavor.
After cooking, the agaves are crushed using a horse-drawn tahona. The resulting juice is fermented in open wooden vats with natural yeasts, a process that can last from seven to ten days depending on the weather conditions. Subsequently, the fermented mash is distilled twice in small copper stills, resulting in a pure and high-quality mezcal.
As for pairing, Del Maguey San Luis del Rio Mezcal is very versatile. Its smoky notes and complex flavors make it ideal to accompany a variety of dishes. It pairs perfectly with grilled meats and barbecue dishes, enhancing the flavors of the meats and adding an extra dimension to the palate. It is also excellent with fatty fish such as salmon and tuna, as well as with seafood.
