Ginebra Tarquin´s Cornish Dry gin
This Ginebra Tarquin´s Cornish Dry gin is a modern style London Dry Gin made on the coast of Cornwall. It is distilled with 12 botanicals that have been hand-picked after a careful selection. The entire process is artisanal, following tradition without neglecting innovation. The final result is wonderful.
Elaboration
For the elaboration of this gin, it is distilled in small batches of pure water and 11 carefully selected and hand-picked botanicals from various places around the world, in three 250-liter copper stills that are directly heated and sealed with bread dough, and one state-of-the-art 500-liter still.
The violets are added at the end of the process. The botanicals are left to macerate overnight in a neutral grain spirit made from wheat. Before turning on the stills in the morning, the missing violets are added to complete the recipe. As the stills heat up, Tarquin constantly monitors the process, sniffing and tasting the distilled spirit that comes out of the still at different temperatures. Only the purest "heart of the distillation" is taken (achieved when the still has reached a temperature of 78 ºC), and the "heads" and "tails" (the first and last part of the distillation) that do not have the most selective texture and flavor are set aside. After distillation, this "heart cut" (around 76% of pure gin volume) is cut with demineralized spring water from Cornwall to reduce it to the desired 42% volume. Nothing else is added as indicated by the true London Dry Gin style. Each bottle is filled and labeled by hand, dipped in a slow cooker filled with paraffin wax, stamped with the Puffin logo, given tasting notes by batch, and individually signed by hand.
The botanicals that make up this gin are: juniper from Italy, coriander seed from Bulgaria, licorice root from Uzbekistan, angelica root from Poland, iris root from Morocco, green cardamom from Guatemala, cinnamon from Madagascar, bitter almonds from Morocco, Devon violets, and fresh orange, lemon, and grapefruit peel.
