The Goose confit from the Périgord, a real local product, 1 thigh
This goose confit was made according to my recipe, in an artisanal way. A real gourmet confit with soft and tasty flesh. One of the great gastronomic specialties of the Perigord. The confit is the result of a very long and slow cooking in goose fat. We thus obtain a goose confit with a very tender and tasty flesh. The goose confit is a gourmet dish.
The goose confit is to be served grilled in the oven so that the skin is golden and crispy.
Tasting tips :
Clear the confit of its fat after placing the can in a water bath for a few minutes. Reheat for 15 to 20 minutes in a traditional baking dish (th.6). Grill for 5 minutes, skin on grill side.
Serve it goose confit with potatoes, porcini mushrooms, or green beans sauteed in duck fat with a parsley; or cold, cut into strips with a curly salad seasoned with walnut oil.
