The Company
The ROKA company was founded by Jo Roodenrijs in 1946, as a parallel business to his Patisserie in Delft, Holland.
The company specialises in the production of very high quality crispy puff pastry biscuits, with a strong mature Gouda cheese flavour (30%). It has attractive packaging, excellent storage conditions and an exclusive image.
In 1955 ROKA products were sold in 32 countries and the original bakery could not cope with the growing demand any longer. Therefore, it had to move to a new plant. Throughout the 1960s and 1970s the founder changed his strategy and concentrated on the European markets, intensifying business relations and creating gradual growth.
His son Jo's and grandson took over the business in 1980. Over the past 20 years, the company has grown solidly and in 2002 was sold to a third party.
The new management, whose roots are in the cheese business, embraces the original mission to be a good example of authentic Dutch cheese biscuit making.
These biscuits are made from refined puff pastry (90 layers), 12-month matured Gouda cheese and other high quality ingredients. The strategy, however, in which research and product development play a key role, is to further promote relationships with local partners.
The cheeses
For centuries, the Netherlands has had a thriving cheese industry and export, which began in the Middle Ages. One of the main cheeses traded was Gouda. Today, Gouda cheese has a solid international reputation, and is appreciated for its mild and creamy taste. This cheese is made from whole milk and has a distinctive yellow interior, dotted with tiny holes. It comes in 11 kg wheels and usually has a dark yellow rind.
At ROKA we only use the best quality Gouda, matured for 12 months, during which the cheese acquires its deliciously strong flavour. The whole wheel (without the rind) is ground to a paste and mixed with premium flour and other ingredients, according to the original family recipe from just before World War II. With our deep experience in making Gouda cheese biscuits, we have developed a variant based on cheddar cheese, by far the best known and most widely consumed cheese in the world. The original Cheddar cheese, is a heavily pressed, uncooked cheese, named after the village of Cheddar, which is in the most dairy rich Somerset area.
12 month aged red Cheddar is what we use for our Cheddar Crispies and Sticks, you get a rich flavour with a hint of nuttiness.
Recently, we have introduced Cheese Crispies based on the King of Cheeses: Parmigiano Reggiano (PDO), to further complete our range.
Parmesan cheese is a unique Italian cheese known worldwide as the King of Cheese. This cheese is made in the provinces of Parma, Reggio Emilia and Modena, as well as in some areas of Bologna and Mantua. The Parmigiano Reggiano DOP used, has matured for 24 months and has a brittle, grainy texture. The delicate aroma and slightly sweet taste make it an ideal ingredient for our ROKA Parmesan Crispies
