Making Salsa Verde

All the raw ingredients are put in a casserole, and simmered for three hours. They are crushed, packed in glass jars and vacuumed.

Why is the vacuum made?

It consists of extracting the air from the packaging. It has multiple advantages:

• No loss of food flavor, color, or odor.
• They preserve the original texture and firmness
• Extend the shelf life of food considerably
• Prevents the proliferation of microorganism
