Also called Albacore Tuna. It is the highest quality fish of the tuna family and, during the summer, it is caught in large groups in the Bay of Biscay where it is caught in the so-called "coastal tuna fishing". It is characterized by its white flesh, exquisite flavor and a softer texture than the rest of its species
The body of the Bonito del Norte is stylized and protected by scales. The back has a characteristic dark blue color, with a shiny grayish belly. It is distinguished by its long pectoral fins. Its average size is 75 cm, reaching a weight of 10 to 15 kg
