Crafting

The onions are cooked over a very gentle grill and peeled. They are placed in glass jars with Moodena vinegar, slightly reduced with water to soften their flavor and with a little sugar to modify the acidity. The salt content is corrected.

Why is sterilization done?

Sterilization is the elimination or death of all microorganisms contained in the packaging. We do this through the moist heat method (in an autoclave)

The main benefits of sterilization are:

• The product is more durable.
• Destroys bacteria
• Creates a vacuum that facilitates an airtight seal, preventing re-contamination

Conservation

The product will keep for 1 year at room temperature. Once opened, it should be kept in the refrigerator.
