Nutritional value and benefits The nutritional properties of tomatoes are exceptional. Tomatoes are low in energy and fats, but rich in vitamins and minerals. Minerals such as magnesium and potassium stand out, as well as vitamins like C, A, and some from the B group. Additionally, the pigment that gives them their characteristic red color belongs to substances called carotenoids (or pro-vitamin A) like lycopene. This nutrient is especially relevant because lycopene and vitamin C are nutrients with powerful antioxidant action – that is, they combat free radicals, thus exerting a protective function on the body. While some of the vitamin C is lost when cooking tomatoes, the opposite happens with lycopene. Cooking tomatoes with olive oil improves the availability and absorption of this nutrient.
