75% Iberian Acorn-fed Ham always has an outer layer of fat (yellow fat). Thanks to this layer, the ham can withstand all the necessary months for proper curing.
The total yield of the ham can vary between 38% and 44%.
This means that not all pieces are the same and it can vary by up to half a kilogram of meat up or down in an 8kg ham, and it is normal for there to be about 3.2kg of meat left in an 8kg ham once we have removed the bone and outer fat.
Usually, the larger the ham, the higher % of meat it will have.
