Javier Sanz Finca Saltamontes is an excellent wine to accompany a wide range of dishes, such as grilled meats, sausages, seasoned rice and different types of cheeses.
The Javier Sanz Finca Saltamontes wine comes from El Pago de Saltamontes, a 2.27 hectare plot of pre-phylloxera goblet-trained vines, owned by the family for four generations. This estate was first registered in 1863, hence its name, and is known to be more than 150 years old.
The old vineyards of El Pago de Saltamontes are goblet-trained and have a very low yield of approximately 1,400 kg per hectare. The production is very limited but of exceptional quality. The grapes are harvested by hand, which allows for an initial selection of the grapes in the vineyard itself, guaranteeing the quality of this select wine.
The winemaking process consists of extracting its full potential, particularly the fruity flavours typical of the variety, followed by a short maceration process to perfect its aromas and freshness. Finally, it is aged on its fine lees for several months before bottling.
It shows a beautiful golden yellow colour with bright tones in thin layer. Its nose is reminiscent of candied orange peel, bread dough, with hints of fennel and aromatic herbs. It is exceptionally smooth and creamy on the palate, with moderate acidity and a long, pleasant finish. The ageing on the lees gives this wine an exquisite creaminess and a smooth mouthfeel.
The texture and body of this wine allow it to accompany more elaborate, spicy and flavoursome dishes, without forgetting vegetables, rice dishes and fish. It can even be paired with roast meat. The recommended drinking temperature is between 8 and 10 degrees.
