The Malcorta verdejo ripens later than the conventional verdejo, which gives it a higher natural acidity.

To make this wine, they start with a cold maceration and, after pressing, the must is racked by gravity for 24 hours. Fermentation takes place at a temperature of less than 15 degrees, which allows the process to be slower and the fruit aromas of the variety to be preserved as much as possible.
