La Bota 107 de Florpower MMXX is a still white wine made by Equipo Navazos in Sanlúcar de Barrameda.Procedente from 100% palomino fino grapes from Sanlúcar vineyards with vines between 55 and 85 years old located in the Pago Miraflores La Baja, again in this 2020 vintage the wine fermented in the old style, in the same butts in which it has then aged under veil. After fermentation it was aged under flor yeasts for eight months. In May 2021, the wine was removed from the barrels and transferred to a stainless steel tank where it remained under the now much more subtle influence of flor yeasts until it was bottled in July of the same year.o.Dentro of the Florpower saga continues the style initiated with the Botas 67 (Más acá), 77, 84 and 97. In other words, it is aged under the veil somewhat shorter than the first Florpower. According to Eduardo Ojeda and Jesús Barquín, this wine seeks balance and freshness for a perfect expression of the vineyard through the biological aging process, which is even shorter than the first Florpower. Only a couple of months of resting and gentle aging under flor in steel tanks after the common initial period of intense biological aging in the traditional 600-liter sherry butts.
