Aging:
La CIMA is aged by malolactic fermentation in casks. Aged on Lees for 20 months in French oak barrels and then bottled for 18 months.
The wine has a garnet-ruby color of medium intensity. In the nose it is fresh, with a great presence of Mediterranean herbs, ferric memories and a wide range of crisp and sharp fruits: currants, cherries, plums and a fresh souvenir of menthol and eucalyptus. In the mouth has an entrance that quickly occupies the whole mouth, with a tannin that seems almost nonexistent and that appears gradually at the end of the tongue and then disappears again. Meaty souvenirs, ripe red fruit, black pepper and licorice. Sapid, fresh, elegant and very precise.
