TASTING
This oil from the Los Cerros de Úbeda area, made from picual variety, has a mild flavor with certain notes of bitterness and spiciness. It is one of the most stable varieties with a higher proportion of oleic acid known, which gives it nobility and flavor. Its stability makes it very resistant to rancidity.
PAIRING
Recommended for daily use in our kitchen for dressings, frying, preserving, or confiting. Ideal for cooking and dishes where the taste of the oil stands out for its presence. Its performance is much higher than other vegetable fats, cold or hot, as less quantity is needed given the intensity of its raw aroma and increases in volume when hot, retaining better than other fats their dietary properties.
