Night harvest in boxes (preventing high temperatures, oxidation, premature grape breakage delaying the start of maceration). Grapes destemmed and crushed for easy extraction of juice without pressure, for a light color extraction and increased varietal aromas. Fermentation at low temperature (15ºC) to obtain subtle, honest, fresh, and elegant aromas.
