Harvest at night in boxes (we prevent high temperatures, oxidation, premature grape breakage by delaying the start of maceration). Pressed grapes are destemmed and crushed to facilitate obtaining unpressurized must, for a slight extraction of color and to increase varietal aromas. Fermentation at low temperature (15ºC) to obtain subtle, frank, fresh and elegant aromas.
