Dominio de Valdepusa Cabernet Sauvignon is a red wine made by the winery Marqués de Griñón in the Pago Dominio de Valdepusa , which since 2002 is the first Spanish Pago D.O. The winery Marqués de Griñón and the Pago Dominio de Valdepusa are located in the town of Malpica de Tajo , province of Toledo. As its name indicates this red wine is a single varietal Cabernet Sauvignon. Its grapes come from vineyards planted in the early 70's, at an altitude of 450m above sea level on clay soils with a very good drenaje.Los vineyards support a continental climate, with great temperature contrasts with a very cold winter and a dry and hot summer. The grapes are destemmed and transferred by gravity to stainless steel tanks for fermentation. After fermentation, maceration lasts between 4 and 5 weeks. Dominio de Valdepusa Cabernet Sauvignon is aged in new French Allier oak barrels for 12-15 months in an air-conditioned aging cellar.
