Mezcal Alipús San Baltazar Joven is a young white mezcal made with 100% Espadín agave from hilly and white and rocky land by Don Cosme Hernández and his son Cirilo in San Baltazar Guelavila, Tlacolula, Oaxaca.
It is an artisanal mezcal fermented in cylindrical pine wood vats and double distilled discontinuously in copper stills.
TASTING NOTES:
Appearance: clear.
Nose: aromas of acetone and green herbs.
Palate: flavors of sweet fruits (with a light hint of coconut) and then delicate spices, with a long finish.
