Mezcal Vago Artesanal Espadín Jarquín
A mezcal coming from agaves located in Nanche, Miahuatlán, whose soils contribute earthy notes to the future distillate. It is made in a traditional way with a longer roasting time than usual, giving it a more smoky touch than other mezcals from the same area.
Artisanal method. The agave is cooked for 5 to 7 days, slightly above average, giving it a smokier touch than usual.
The Tobalá agave is one of those little gems that mezcal producers eagerly seek. A very scarce and prized type of agave that offers very high-quality mezcals, more floral and sweet. It grows in mountainous areas, usually difficult to access, and its pineapples contain a high concentration of starch that gives the mezcal those smooth notes. As a curiosity, "Toba" means maguey, and "lá" hot or aromatic, and it is known as "The king of mezcals."
This mezcal pairs perfectly with fresh fish, sushi, and oysters.
