Peñafiel
Intense purple color with violet hues, clean, very lively and bright. Very fresh nose, dominated by very intense aromas, typical of the Tempranillo variety (red berries and light touches of currant). Balanced on the palate, round, with hints of gummy candies and a smooth mouthfeel.
VARIETIES
Made exclusively with grapes of the Tinta Fina variety (Tempranillo) from the highest area of our Castillo de Duero vineyard at 920 m. altitude.
HARVEST
Carried out at its optimal ripeness, in the cool of the night with a mechanical harvester to preserve its freshness.
WINEMAKING
Once in the cellar, the harvest goes through a grain selection table, followed by a gentle destemming and crushing.
FERMENTATION
Alcoholic- A pre-fermentation cold maceration is carried out in an inert atmosphere to extract fruity aromatic compounds from the grapes. It ferments for 11 days at a controlled temperature of 24ºC, in 17,000l truncated cone tanks. Malolactic: It is carried out in stainless steel tanks along with its fine lees, with gentle batonnage to increase its mouthfeel.
