Almond flour is made by grinding sweet almonds. It is usually made with peeled almonds (without skin) or whole almonds. It is more similar in consistency to corn flour than wheat flour.
It is used in baking and confectionery: to make almond macaroons and other sweet pastries, to fill cakes, and is one of the two main ingredients in marzipan and almond paste.
Almond flour has recently gained prominence in recipes for those on a low-carbohydrate diet. It adds moisture and a rich nutty flavour to baked dishes. Recipes with almond flour are exquisite.
