The preparation of matcha begins several weeks before harvest. First the tea plants are covered to hide them from the sun. This slows their growth and creates a darker green color in the leaves. With this process the tea gains in amino acids, creating a sweeter tea
After harvesting, the leaves are placed on a flat surface to dry. The result is called "tencha". The stems and veins are removed before being ground to a fine, talcum powder texture, a deep green, known as "matcha"
Only ground "tencha" produces matcha. Other ground teas are known as "konacha"
