Seitan is a food with a high nutritional level, perfect for vegan or vegetarian diets.
Seitan is also called "vegetable meat" because of its protein content, texture and appearance, it is the wheat protein, gluten. The protein content of seitan is 24% of its weight. It is softer and easier to digest than meat or eggs. It is low in calories and low in fat. It contains abundant lecithin. Seitan has more calcium and minerals than meat but less salt.
