Riet Vell buys this wheat from farmers selected for the location of their plots, under the supervision of SEO/BirdLife and trying to offer better economic conditions. These are very low yielding areas in kilos per hectare but ideal for very good quality durum wheat for processing into pasta. Manufacturing specifications: The durum wheat is ground to semolina and kneaded with water and then passed through the moulds and left to dry
