The Iberian pigs Brisa

The Bria Iberian pigs have some peculiar characteristics that distinguish them notably from the rest, resulting in Iberian products of the highest quality. They are specimens with genetic history, whose origin lies in a Mediterranean subspecies of Sus Scrofa Mediterraneus, native to the famous Spanish dehesas, mainly located in Salamanca.

The Salting process

At Ibéricos Brisa, all the pieces are covered with sea salt to favour their dehydration and preservation, thus contributing to the development of the colour and aromas typical of cured products. They remain in the salting chamber for one day for each kilo of weight of the fresh piece, at a controlled temperature, between 3º and 5º centigrade, and with a relative humidity between 75% and 85%.

A product with multiple health benefits

All Ibérico Brisa products are the result of an artisanal production process, allergen-free, no colourings, lactose- and gluten-free, making them ideal for all consumer groups.

Hundreds of studies support the antioxidant benefits of Iberian Ham, its high content of oleic acid and its ability to reduce cholesterol and triglycerides. Its consumption improves plasma lipid levels, lowers blood pressure and improves vascular endothelium. It has a very adequate proportion of essential amino acids and free amino acids, formed during the long healing period. It is a product rich in Omega 3, Omega 6 and Omega 9, heart-healthy and low in salt, and is also an excellent source of protein. This presence of proteins favours the absorption of other micronutrients, such as Iron, Zinc, Phosphorus, Potassium, Magnesium and Selenium, of which Iberian Ham is also an excellent source.
