The gourmet range represents in PICUALIA the juice of November olives. In this month, the olive changes its green color to a purplish color, this process is known as Envero. The mature olive preserves a green oil but with the first notes of ripeness, which appear as a result of fruit maturation. Although apparently the olive has not lost the freshness of October, the tasting notes and characteristics of November make it different.
The predominant tasting note is tomato but with more ripeness, losing the intensity of green grass and other positive attributes appearing that make it special, like ripe banana or other ripe green fruits, finding apple, thyme or licorice among its tasting notes.
