Clos de Lôm Monastrell Rosé Wine. This pale pink rosé is made from Monastrell grapes from vineyards over 45 years old, grown in dry-farmed, clay-limestone soils. The grapes are harvested in the last week of September when they reach their maximum ripeness.
The harvest is received early in the morning and processed quickly with the latest technology. The clusters are destemmed to remove the stem or herbaceous part, the berries are crushed, macerated in a continuous homogenizer, and the free-run juice is separated using a Decanter system, without the use of presses.
Subsequently, it is taken to tanks where it ferments with a proprietary selection of yeast for over three weeks to extract the maximum aromatic power and richness of nuances in the mouth.
After fermentation, the wine rests on lees for over 4 months to achieve greater complexity and volume in the mouth, resulting in this prized Valencian rosé wine in the typical style of the French Provence.
