ORIGIN: Spain and other areas of the Iberian Peninsula
REPRESENTATIVE SPECIES: Kermes oak (Quercus L.).
MAJORITY FLORAL COMPOSITION: Kermes oak (Quercus L.), Heather (varieties of Erica sp.), Thyme (Thymus vulgaris) and varied native wild flora plus selected saffron from Jiloca (Crocus sativus).
PRODUCTION TIME: End of summer and autumn.
COLOR: Dark brown almost blackish mahogany to brownish-ochre tinged with reddish-orange tones.
FLAVOR: Intense and persistent sweetness with slightly bitter nuances.
AROMA: Strong, compact, pleasant and feral
SPECULIARITIES: Raw honey, pure, not homogenized, not filtered, without added sugars.
STORAGE: Keep in a dry, semi-dark and cool place
**In its natural process, honey crystallizes and hardens depending on various parameters (temperature, floral origin, etc...)
Intense and persistent sweet flavor, it has a strong, compact, feral aroma that does not leave the consumer indifferent
Because of a mostly resinous composition, it is almost completely devoid of crystallization, forming a dense and tough honey, malleable at the same time
The valuable saffron has exquisite organoleptic qualities (very pleasant soft aroma, spectacular reddish-orange color, traditional sweet - bitter taste) and nutritional (rich in vitamins (C, B6), minerals (magnesium, iron, potassium) and low in purines), achieved through a careful process of cultivation in suitable places and a select handcrafted production in the traditional way
