Cold maceration during the first few days of fermentation, fermentation temperature between 26 and 28ºC until the day of pressing. A maceration time of 15 days, followed by aging in French and American oak barrels for 12 months to carry out malolactic fermentation.
Recommended serving temperature: Between 16 and 17ºC.
Surrounded by vineyards, the winery is located at an altitude of over 700 meters, where flora and fauna coexist in a unique environment. Its location and care make it the perfect place for unique winemaking, a place to enjoy the creation of Jumilla wines in an idyllic setting and to have great wine tourism experiences.
In this land of scarce rainfall and rocky soils, vigorous vines and ripe grapes grow, which are used to produce wines with great texture, full-bodied, and full of personality that captivate enthusiasts and experts. The main cultivated varieties are Petit Verdot, Cabernet Sauvignon, Tempranillo, Merlot, Syrah, and Monastrell, all treated to achieve a perfect adaptation to exceptional land and climate conditions.
The winery has an experimental plot dedicated to innovation and development in order to achieve a new, more carefully crafted product every day to surprise its consumers and drive the industry, cultivating varieties that are not commonly grown in this area but have great potential. Among the experimental crops are Viognier, Touriga Nacional, Caladoc, Egiodolá, Rousanne, Marsanne, Gewurztraminer, and Malbec.
Several plots are cultivated according to the requirements of "Organic Farming". In fact, Casa de la Ermita produces the first organic wines in Jumilla and pioneers in the Region of Murcia, thanks to its vineyards complying with the legislation of "organic agriculture" for over 5 years.
