Precious story behind this wine made from old vines of the pámpana blanca variety, which includes a donation of part of its profit to the Caico Foundation (collaborating with healthcare and pediatric oncology units to improve the living conditions of children and their families).
They are the only ones to make this minority variety, as part of their project to recover native varieties
They are the only ones that produce this minority variety, as part of their project for the recovery of native varieties. They cultivate it by natural and logical viticulture, without adding herbicides, pesticides, etc.. These respectful measures allow the vines to express themselves with all the strength and particularity of the terroir they come from. The free-standing vineyard was planted in 1913, and is located in the municipality of La Puebla de Almoradiel, in the area known as "Pozo del Árbol", at an altitude of 632 meters, in the province of Toledo
The grapes were harvested by hand, making double selection of clusters, first in the vineyard and then in their "garage" bogega, where they were destemmed and crushed, immediately after harvesting. The press used is manual vertical. Vinified with its own autochthonous yeasts, it was cold macerated before fermentation, and then subjected to controlled alcoholic fermentation. Malolactic fermentation took place in French and American oak barrels, where it was aged for 463 days
It was racked to remove impurities by natural decanting, in order to reach the bottling stage in optimal conditions. However, during its life in bottle, as is logical, precipitates may appear, due to its natural elaboration.

TASTING NOTES: Enjoy it to accompany white or red meats, stews, blue fish, Italian pasta, risottos, Iberian meats and even dark chocolate. Given its natural elaboration, it is possible that precipitates may arise
