PITTACUM AUREA RED WINE
Pittacum Áurea is a red wine made from the Mencía variety, aged in new French oak barrels for 14 months. It is part of the Bierzo D.O. The grapes arrive at the winery in small 12 kg capacity boxes. Vinification takes place in stainless steel tanks with punch-downs and light pump-overs during fermentation, which lasts for 15 days at a temperature of 28°C. It then remains in barrels for the full 14 months, during which time the wine is still and calm in the dark and cool cellar.
Tasting notes for PITTACUM AUREA RED WINE:
In appearance, it stands out for its intense purple color with violet edges and high density.
On the nose, it is intense and elegant. Complex, with aromas of red fruits and flowers (violet) combined with notes of cocoa, toasted flavors, and toffee on a mineral and balsamic background.
On the palate, it is powerful, balanced, and fresh, with a long finish. Very tasty and complex, with a good weight of fruit. Its acidity promises a long future. Notes of cocoa and licorice on the retro-nasal and a very long and persistent finish on the palate. A frank, complete, and profound wine.
PAIRING FOR PITTACUM AUREA RED WINE: Roasted lamb and kid, beef and game stews cooked in the wine itself, grilled meats. Fish in sauce. Try to avoid highly spicy dishes. Serve this wine at a temperature between 15°C and 18°C.
