The San Román are deep and mineral wines that combine power and elegance, have civilized tannins and a dense texture in the mouth, with crisp flavors of black fruit. Built to grow in bottle, stabilization processes have been minimised to ensure maximum respect for grapes and soil.
San Román is very expressive in the nose with an accentuated mineral character, balsamic aromas and notes of graphite. Broad, succulent, with nerve and persistence.
It bottled in March after spending 24 months in new and used French and American oak barrels. A little extractive vinification was made to obtain aromatic delicacy and fine tannins.
