Blue fish, with a high content of OMEGA3 fat. These fish are chosen from the Atlantic Ocean because these waters are very cold and therefore contain more plankton, which provides the fish with higher quality and flavor. They feed on zooplankton. Great care is taken in their transportation to the factory in order to preserve their texture and brightness. The cleaning process is done one by one, where the head and tail are cut off and they are thoroughly gutted, always making sure they are not damaged. The canning process is also done one by one in a traditional way, carefully selecting by size and placement. A chili pepper is also added. The toasting procedure (as in the past) is used to prepare the Sardine/Sardinella and then the covering liquid is added. Pure olive oil is used.
