This semi-cured goat cheese is handcrafted by Collados Quesería. It is extraordinary if you enjoy mild cheeses, but with an unmistakable and incomparable flavor. The process used is the traditional one, manually pressing it with a knotted cloth, which gives it its characteristic shape. Then it matures in the cellar for about 45 days, to achieve the texture and flavor that will make you fall in love at first sight.
