Putting googly eyes on cheese? Definitely. This semi-cured goat cheese is artisanally made by Collados Quesería. The process used is the traditional one, manually pressing it with a knotted cloth, which gives it its characteristic shape. Then it matures in the cellar for about 45 days, to achieve the texture and flavor that will make you fall in love at first sight.
Being "crazy like a goat" in this case would actually be heavenly. Because our flock grazes in a unique terrain, giving our cheese an unmistakable flavor. The goats graze freely, to the rhythm of "Libre" by Nino Bravo, at the foot of the Sierra de la Sagra. This is essential to obtain a unique and high-quality milk.
