For those with a palate which enjoys a more intense and complex flavour, we offer a smoked variety which, after tasting, leaves a persistent distinctive after-taste with a light touch of smoke.
In the case of smoked cheese, the rind is considerably darker than the natural variety, being a brown or a marooned ochre colour.
Where did the name Idiazabal originate? Idiazabal is the name taken from a small locality in Gipuzkoa located on the skirts of the mountainside of the sacred mountain of Aralar, in the center of the Basque Country, in an area with a strong pastoral tradition that goes back four thousand years.
