The harvest that takes place in the "Marco de Jerez" is of utmost importance for the production of the Sweet Wine Leonor Palo Cortado, as autumn and winter in this area are mild, while spring is characterized by high temperatures and blooming. In the summer, there is not excessive heat, but there are multiple days of dew, favoring abundant production, so the harvest begins in August.
The Palomino grapes are gently pressed, and the must obtained from this first pressing is known as "yolk must," being the most delicate and elegant.
After fermentation, classification, and fortification of the wine, it enters the "solera," where it will remain approximately 12 years in American oak casks.
Jerez wine ages by being in total contact with the air, allowing for complete oxidation and resulting in the most delicious and delicate Sweet Wine Leonor Palo Cortado.
