Tenuta di Biesrno Campo di Sasso Sof is a rosé wine made from Cabernet Franc and Syrah with IGT Tuscany by the Tenuta di Biserno winery.
SOF Rosé pays homage to Sophia Antinori, Marchese Lodovico's daughter, by being deeply inspired by her. The exquisite blend of Cabernet Franc and Syrah comes from the delicate slopes of the San Giovanni vineyard in Campo di Sasso, located in the charming village of Bibbona, in the Alta Maremma region. The characteristic soil of the area is a mixture of loam with sand, silt and a hint of clay.
The grapes were harvested by hand at different times: the Syrah on 22 August and the Cabernet Franc on 30 August, in the early hours of the morning. Subsequently, after meticulous sorting and destemming, the grapes were gently pressed and given a short period of maceration. Throughout the winemaking process, winemaker Helena Lindberg oversees the juice in order to achieve the specific colour and flavour profile sought by Sophia and Lodovico Antinori. Finally, the must undergoes alcoholic fermentation in stainless steel tanks under strict temperature control.
It presents itself as an exquisite and smooth balance, with a creamy texture and an impressive bodied presence. In addition to fruity and floral nuances, there are refreshing acidic hints and a long, harmonious finish.
