The pota ring is also known as giant squid or luras. Pota is a cephalopod that closely resembles squid, but they are larger. Their wings are smaller than those of squid and their flavor is stronger and more intense. Their body is elongated, and inside they have a kind of shell called a pen.

Storage and tips
If you have bought them frozen, to defrost them you should take them out the night before and place them in the refrigerator to prevent bacterial growth. A trick to make them tender is to soak them in beer for 30 minutes, then transfer them to milk for another half an hour. Drain them well and let them sit for half an hour before using them for cooking.
Recipe and uses in the kitchen
Pota rings are best for making stews, fried dishes, or dishes with tomato sauce. Sauté onion in a pan, once it is translucent, add the pota rings and brown them a bit. Add 60g of brandy and increase the heat to evaporate the alcohol. Then, add tomato and a fish stock cube and cook for 15 minutes.
