The Cava Celes presents a clean taste of goat milk, without edges, bitterness, or spiciness. It is not easy to make a good matured goat cheese, due to the complexity of this milk. When cut, it has a pearly white color. It smells like fresh mushrooms, damp earth, and its texture is firm and consistent.
