The denomination of origin allows several grape varieties for the production of Txakoli de Getaria, but there is one main grape, Hondarribi Zuri, followed by its red version, Hondarribi Beltz. To a lesser extent Gros Manseng, Petit Courbu and Chardonnay are used among others
There are several theories that try to explain how and when viticulture arrived on the Cantabrian coast. Numerous authors place the beginning of Cantabrian viticulture in medieval times, due to the impulse received from the Kingdom of Navarre to the Camino de Santiago, which is the first European axis through which thousands and thousands of pilgrims pass.
This being so, it is said that monks coming from France contributed and carried out the work of planting vines along the famous Camino de las Estrellas to produce wine, in a first phase for self-sufficiency, and gradually, especially in the most favoured areas, for the production of a higher quality wine.
