The round of veal is a piece of meat included in the First A category, located in the rear part of the animal, specifically on the outer side of the hind legs, next to the topside and the eye round.
Its name comes from its cylindrical shape and it is a highly prized meat because it contains little fat and few visible nerves.
However, it remains more tender and juicy when cooked than other pieces from the same area, such as the topside.
