Atamán vermouth is made primarily with Manzanillas from the historic Angioletti and El Toro wineries, both in the Barrio Alto Sanluqueño. It is a traditional vermouth based on Atamán's old reserves: quinados wines and old vermouths that have been kept in Bodegas Barbadillo for decades.
When they stopped making they remained in the cellar as historic wines, the quinas and vermouths of those years. But it is true that they have had to reformulate the vermouth, as there was no written recipe for it.
