Breeding
This Paco García Seis Red Wine is aged in 225-liter French oak barrels for six months.
Harvesting
This wine has been harvested by hand in the El Paraje del Seis vineyards, an estate from 2007 and which is located about 510 meters above mean sea level where there is great ventilation that keeps the area cool. The soil type of these vineyards is sandy loam and there is a balance between leaf surface and vine production. The grape variety for this wine is Tempranillo and is late ripening.
Making
Once in the winery, the grapes are separated from the cluster and transferred to a tank where they remain for 48 hours at a controlled temperature of 5 to 10 degrees. Then it is fermented at low temperature where the detail is maintained by mixing both the skin and the pips and liquid through a novel system of disintegration in which "the hat" is completely submerged in the liquid.
