Galician Rias Volandeira in Organic Scallop Sauce

The Arousa Estuary is characterized by its fresh, crystal-clear waters, rich in nutrients and home to some of the best molluscs in the world

The volandeira (Aequipecten opercularis) is a bivalve mollusk that inhabits the sandy bottoms of our estuary, up to 80 meters deep, and feeds on plankton

It is harvested by the inshore fleet of the Galician ports of Rianxo and Cambados.

It is a very common species in Galicia

Its name comes from its way of moving between water currents, thanks to the rapid contractions of its muscles that close the valves and make it seem to "fly in the water"

It has a very fast growth of one year and its commercial size is 4cm.

It is very rich in vitamins A and B, low in fat, high in protein and minerals such as calcium, iodine and phosphorus among others

Its presence is frequent in haute cuisine dishes due to its texture and delicate sea flavor.

It is often confused with shrimpa. Barely 1% of the annual total collected is zamburiña, the rest are volandeiras which is what is usually offered in restaurants.

Our delicious scallop sauce is prepared according to a traditional recipe based on a sauce of tomato and onion in organic virgin olive oil; seasoned with bell pepper, carrot and spices.

Ingredients sauce:

  • 8% extra virgin olive oil
  • 8% tomato
  • 3% onion
  • 3% carrot
  • 3% carrot
  • White wine, paprika, cumin, thyme, rosemary, oregano, sugar and sea salt

All the ingredients used for the preparation of this sauce, come from organic farming, certified by the Regulatory Council of Organic Agriculture of Galicia, CRAEGA.
