PRODUCTION AND AGING Spontaneous fermentation at temperatures between 24 and 27 degrees. Gentle pumping over, "delestage" and minimal oxygenation during alcoholic fermentation. Maceration for 10 to 15 days. Aging for 16 months in French oak barrels (30%) and American oak barrels (70%).
