The White Wine Can Matons Sant Fost de Campsentelles, belonging to the Alella Designation of Origin, is a true vinicultural gem that captures the essence of the region and its rich winemaking history. Wine made from the native variety Pansa Blanca.
The history of Bodega Can Matons dates back to the 18th century, when the historic farmhouse of the same name was built among the picturesque vineyards of Santa Maria de Martorelles, in the Vallès Oriental region. These vineyards, some with more than 60 years of age, are worked in an ecological way, contributing to the most authentic expression of the local terroir in each bottle. Can Matons honors its historical legacy and becomes a living testament to the passion for wine and respect for the land.
This exceptional wine emerges from the vineyards of Canyelles and Can Torres, whose vines have a history ranging from 20 to 80 years. Nestled in a sandy soil known as sauló, these lands offer a uniquely challenging environment for grape cultivation. Characterized by its poor nutrient content, low water retention, and moderate pH, sauló infuses the grapes with a rich complexity that is evident in each sip.
Ecological commitment is a cornerstone in the work of Can Matons Sant Fost de Campsentelles. The vineyards are treated meticulously, following ecological principles that honor the historical legacy of the land. This winery is committed to preserving and honoring the heritage of past generations, working in harmony with nature and supporting the health of the soil and plants.
The production of this exceptional white wine is a process guided by passion and respect for tradition. The grapes are fully pressed, and their fermentation takes place at a controlled temperature of 16 ºC in modern stainless steel tanks. However, what truly stands out is the slow fermentation of the oldest plots, which takes place in 400 and 500-liter oak barrels. This artisanal and careful approach confers a unique depth and richness to the wine, capturing the very essence of the land it comes from.
