We season each piece with our homemade marinade and stuff them in the traditional way after several days of rest. Finally, we subject them to a slow drying process in our natural drying sheds, under strict supervision. The maturation process takes place in a natural way, thus guaranteeing their exquisite flavor and unmistakable aroma
