Without a doubt, these specimens have achieved their size based on their natural diet provided by the Extremadura dehesa. Large Iberian pigs that mark their territory and strengthen themselves by eating more acorns than the rest of their counterparts.

Breeding: Extremadura. Robust animals, the strongest in the dehesa.Curing: Guijuelo. Cured for over 36 months in the most historic cellar of Carrasco, the oldest known cellar since 1895.Sensory analysis: some hams at their optimal curing point, juicy, with an intense cherry-red color, low salt content, and a slight sweet touch. You will not have tasted anything like it.Storage: in a dry place at room temperature. Recommendations for slicing ham: if you want to become a little expert in hand-slicing ham, you will only have two objectives.
