The grapes are hand-harvested at their optimal ripeness and transported in boxes to avoid damage and preserve their integrity. Subsequently, a careful selection of the fruit is made before moving it to the fermentation tanks, where the wine is vinified at controlled temperatures using advanced winemaking techniques that respect the varietal expression.
Aging
The wine ages for six months in French and American oak barrels. During this period, it acquires complex spicy notes (eugenol) and toasty notes (furfural) that integrate with the red and black fruit of the Tempranillo. The American oak imparts hints of vanilla and coconut, achieving a balanced, elegant, and harmonious whole.
Tasting notes
It presents an intense cherry color with high depth. On the nose, the aromas of red and forest fruits prevail; with aeration, hints of licorice emerge, alongside a soft spicy and toasty background. On the palate, it offers a smooth yet powerful entry, of high intensity, with excellent harmony between ripe fruit and the toasty, spicy, and vanilla notes from the oak aging.
It is a wine with aging potential, which can evolve very positively over time.
Food pairing
Ideal for accompanying stews, grilled meats (lamb and kid), baked fish, casseroles, red meats, and cured or semi-cured cheeses.
Recommended serving temperature: 14 ºC – 16 ºC.
